Staal was chosen by the Peterborough Petes in the first round of the 2000 Ontario Hockey League (OHL) Priority Selection, 13th overall.
Henry Staal did not think his son was prepared for the OHL, but Staal concluded his rookie year with 49 points in 63 games. The next season, when he scored 62 points, his point totals climbed.
With 39 goals and 98 points during his draft year, Staal was the Petes’ top scorer. He was selected for both the Second All-Star Team of the Ontario Hockey League (OHL) and the First All-Star Team of the Canadian Hockey League (CHL).
At least one other assist was provided by Staal in the CHL Top Prospects Game.
In the 2003 NHL Entry Draft, the Carolina Hurricanes selected Staal following Marc-André Fleury in the first round. After being selected, he promptly began his first NHL season. As a part of the NHL All-Star festivities in 2004, Staal participated in the YoungStars Game.
Since the 2004–05 American Hockey League (AHL) season was postponed due to a lockout, Staal played for the Lowell Lock Monsters at that time.
He established new team highs for points (77), assists (51), plus/minus (+37), and shorthanded goals (seven) in a single season. He was also selected for the AHL All-Star Classic.
