Career

Appert was a key figure in the French Revolution, even taking part in King Louis XVI’s execution. During the ensuing Reign of Terror, he came under suspicion and was arrested in April 1794, although he managed to avoid being executed.  He began experimenting with food preservation methods in 1795 and was successful with soups, vegetables, juices, dairy products, jellies, jams, and syrups. He put the food in glass jars, sealed them with cork and sealing wax, and then boiled them (in later years, he switched to using an autoclave). This approach is thought to have been utilized by homemakers before Appert, but he was the first to do it on a large scale.
