Her defense team alleges that she was the subject of “mocking and mimicking” during her trial at Bristol Crown Court. They contend that because of the “black humor” surrounding the case and the fact that she became a meme, she wasn’t allowed a fair hearing. Jackson allegedly “lost control” and stabbed her husband twice, once in the kitchen and once in the bedroom, according to Dailymail.
Later, Penelope said, “Look at my records. Over the years, I’ve been the victim of a lot of abuse. According to her, Jackson allegedly told the medical staff that she had “put three holes in him.” Penelope stated that she attempted to murder her husband but decided against it. He could get another cut from her.

At their Somerset home in February 2021, Penelope Jackson, 66, cut David Jackson, 78, with a kitchen knife. Jackson said that her husband made fun of her and “ruined” her particular occasion. She also claimed that he was violent and coercively controlling. At Bristol Crown Court, she was given a life sentence with a minimum of 18 years in prison.
After more than 11 hours of discussion, the jury decided she was guilty by a vote of 10 to 2. Not to add, Jackson said during her testimony that her marriage had “simply crumbled” and that years of “abuse, uninvited sex, demeaning, stopping me from doing things, and all the bad things” had been in vain.
She told the jury that Jackson had always kept her daughter’s 20-year abuse a secret, and that their fight over her birthday meal while they were on Zoom had been the “final straw.” For their dinner of lobster, crab, and steak, she had made the British delicacy bubble and squeak, which combines baked potatoes and cabbage before being fried. This had offended David.
